Here, he presents a contemporary interpretation of local cuisine inspired by the pristine wilderness of Abruzzo National Park. Sourcing ingredients directly from this unspoiled landscape, Donato’s creations reflect a deep connection to the region’s natural heritage. The park is a haven for wildlife, home to the iconic Marsican brown bear, wolves, and the rare Apennine chamois, alongside abundant red deer, wild boar, golden eagles, griffon vultures, and more. Donato is deeply committed to supporting Rewilding Europe’s mission to enhance the rich biodiversity of this remarkable area and let it flourish.
